Department of Post Harvest Technology
INTRODUCTION
The Post-Harvest Technology Department belongs to the Institute of Food and Biotechnology. The Institute was established on October 10th, 2022, based on the combination of the Institute of Biotechnology Research and Development and the Department of Food Technology, College of Agriculture, Can Tho University. It was according to Decision No. 5149/QD-DHCT dated October 28th, 2022, on the assignment of officials to the affiliated unit. The predecessor of the Post-Harvest Technology Department was the Post-Harvest Technology program under the Department of Food Technology. The Post-Harvest Technology program has been taught since 2015 based on the necessary demand for human resources to support the development of the Mekong Delta region, in particular, and Vietnam in general, regarding the processing, preservation, and post-harvest processing of agricultural and aquatic products.
The Post-Harvest Technology Department is responsible for providing undergraduate programs and master's degree programs in Post-Harvest Technology. The modules offered by the Department are related to pre-harvest handling, post-harvest processing, preservation, and production of agricultural and aquatic products, ranging from fundamental and general courses to specialized courses. They are involved not only in Post-Harvest Technology but also directly in the general training program and high-quality program in Food Technology.
Currently, the Department has 03 laboratories (including 6 research rooms) with 08 lecturers, 1 engineer, 01 researcher, and 01 contract staff member. The teaching team includes 3 Associate Professors, 3 PhD holders, and 2 master’s degree holders.

- Food Chemistry Laboratory
- Advanced Food Chemistry Laboratory.
The research directions and technology transfer activities of the Department focus on the application of advanced processing techniques in the handling, pre-processing, and preservation of agricultural products in the Mekong Delta region. The Department especially concentrates on the use of bioproducts in preserving agricultural products for research and practical production purposes.
The Department currently has collaborations in teaching and research with numerous partners both domestically and internationally. These collaborations are for scientific research projects and technology transfer in the Mekong Delta region and across the country. International partners include research and teaching units affiliated with...universities.
